Erciyes
Erciyes is the dormant stratovolcano that looms over Kayseri, at roughly 3,900m one of Turkey's highest peaks and the geological source of much of Cappadocia's soft volcanic tuff. In winter it's home to one of Turkey's largest ski resorts, with lifts spread across several base areas and a season that reliably runs from December into April, drawing skiers and snowboarders from across the country. In the warmer months the mountain becomes a destination for hiking, with routes to the summit favored by mountaineers, alongside cooler highland scenery a world away from the plains around Kayseri.
For most travelers, Erciyes is either a ski trip or a scenic backdrop glimpsed from Kayseri and even from parts of Cappadocia on a clear day. It's not a quick add-on to a Cappadocia balloon-and-fairy-chimney itinerary; it deserves its own dedicated day or two if skiing or serious hiking is the goal.
